Eating More Eggs

My MIL, mother in law, has a story about how, when she lived with her three kids and two in laws, they would buy six gallons of milk at a time. They drank lots of milk normally, and with chai, as well as she made her own yogurt. It is a nice story and I think she looks fondly back on those times.

I didn’t think the story had any relevance to me but I am slowly changing my understanding. I think there are two factors to this, the first is that both of our kids are eating more, they are no longer babies and they both can put away a good amount of food. The second is that my lovely wife Sneha and I are trying to eat more protein and less carbs. We aren’t trying to get buff, yet, or anything like that but we are trying to eat less and hit some basic macros.

So when we used to eat more pancakes and oatmeal, things that are more easily bought in bulk and stored, we are trying to eat a few more eggs. And so previously when we went to Costco we were buying the small size Costco offered, 24 eggs, and get home and it would last us about two weeks. But now we are trying to eat more omelettes with cheese, and since we are making it for ourselves we are having the kids eats more omelettes (one of our kids doesn’t eat cheese). And so in one breakfast, if each of us eat a two egg omelette, that is 8 eggs. If we do that twice a week that is 16. So we can burn through a 24 pack of egg in a week and since we don’t go to Costco that often we are now picking up two packs of the 24 eggs.

And so I feel like I relate, slightly, to my MIL. I can see the purpose of having a fridge in the garage. I can see running through essentials pretty quickly, eggs, milk, cheese, etc. I also know when our kids get older, teenagers, they will eat even more. It seems like a pretty good problem to have and hopefully I will get close to my macros.
